Exciting news- our summer squash is ready to harvest on our early planting! The Zucchini in this week’s box is The Farm Grown. Zucchini should be kept in the fridge until ready to use- it is young and tender, use with a couple of days for optimum taste!

So is the Romaine Lettuce! We do not have a fancy hydrocooler like large commercial farms do, so after harvesting we give it a nice dunk in an ice bath. You may find your lettuce is a little droopy after you unpack it, give it a rinse in cold water, wrap in a dish towel and place in the fridge.

Leeks should be stored in the fridge as well. The white parts are generally the most common part used. Be sure to wash good, leeks grow in sandy soils, and sand can get stuck in the leaves.

Eggplant can be kept in the fridge for 3-5 days, but best to use sooner than later. Not sure what to make other than Eggplant Parm? Try to slice it in 1” rounds, drizzle with olive oil & balsamic vinegar, add some salt and pepper and place it on the grill for 2-3 minutes per side.

Avocados should be kept out of the fridge until they reach desired ripeness.

Peaches this week are white peaches! A slightly different flavor profile than it’s yellow sibling. Keep peaches in the fridge until use.
